Kuzu is a vine from the legume family. It grows mainly in sunny highlands and is widespread in Japan, China and Southeast Asia. It is an ingredient that has long been used in high-end dishes and Japanese sweets. Yoshino Honkuzu is made of 100% powdered kuzu. Unlike most powdered kuzu products, that are mixed with potato starch.
Yoshino is the name of a town in the Nara Prefecture. It is the center for the production of the highest quality kuzu.
